Elderberry

Easy to grow, medium to large sized shrubs, Elderberries feature exotic, tropical-looking foliage accented by huge clusters of beautiful white flower heads in the spring which are followed by large quantities of tasty and nutritious berries in late summer. From clusters of Elderberry flowers you can prepare delicious “Elderberry Fritters” and Elderflower Cordial. From the berries you can make delicious pies, jelly, syrup or wine! Sambucus canadensis is a sub-species of Sambucus nigra and has the same health benefits.
Elderberries like 1/2 day to full sun and well-drained soil. They are not bothered by pests or diseases. The size differs among varieties but, they will usually reach heights of about 6-12 feet tall and wide. The bloom time us usually around June, ripening usually in September, and yield about 20+ pounds of fruit at maturity. Cold hardiness depends on the variety but is usually around -20°F to-40°F (USDA zones 5-3). Elderberry usually begins to bear fruit in about 2-3 years. Pollination requirements differs among the varieties.
